Recipe: Slow Cooker Salmon

salmonSalmon is one of my go-to menu choices, but I have never before prepared it in a slow cooker.

I found this particular recipe and thought it looked great, but I couldn’t imagine how anything could cook thoroughly in a crockpot on low in only 2 hours, but figured I would give it a try.

The recipe worked beautifully – and it would have been even more beautiful if I had checked it at the 2 hour point.  Sadly, I forgot about my lovely pot-o-love until about the 2 hour and 45 minute point (hence the stock salmon photo).  The salmon was fantastic, but the spinach underneath was a little over cooked, but still highly edible (if not just a tad compact – think spinach pancake).

I paired the spinach and salmon with a baked sweet potato and it was a fantastic meal!  I encourage you to give it a try.  But DO check it at 2 hours – it will be cooked! 🙂

Slow Cooker Salmon

1 small bag baby spinach leaves
1-2 lbs salmon filets
1 lemon, sliced
Dill to taste
Salt and pepper to taste
¼ cup chicken broth.

Fill slow cooker with spinach leaves. Top with salmon filets and sprinkle with salt, pepper, and dill to taste. Top with lemon slices and pour chicken broth over the top. Cover and cook on low for 2 hours. Salmon should flake and be fully cooked.
